Ingredients:

  • 2 pieces 100g cod loin
  • Salt and pepper to taste
  • 300g roasted baby potatoes
  • Salt and pepper to taste
  • Olive oil as desired
  • Basil for garnish

Sambalsauce: 

  • 50g chopped garlic
  • 50g sliced onions
  • 100g cherry tomato, cut into 1/2
  • 4tbsp YEO’S Sambal Oeleck
  • 1tbsp YEO’S Light Soy Sauce
  • Juice of ½ lime
  • Sugar to taste

Sambal Cod with Roasted Potatoes

Serves : 4

Preparation Time : 20mins

Cooking Time : 20mins

Cooking Instructions:

In a hot pan/griller, brush cod with some cooking oil and cook until cod is tender.

Meanwhile, sauté onions briefly until brown for about 1min and add remaining ingredients to cook for another 5mins. Season to taste.

For potatoes, season with some olive oil, salt and pepper. Leave it to roast in oven for about 45mins.
