- 4 x Russel/US potatoes
- 1 can of Yeo’s Baked Beans in Tomato Sauce
- 100g Cheddar Cheese, grated
- 4 tsp of unsalted butter
- 1 tbsp Olive Oil for cooking
- Side: Salad greens and tomatoes
Cheddar Jacket Potatoes with Beans
- Boil potatoes in the pot of boiling water till medium cook, you should be able to pierce a fork through with little effort without breaking the flesh.
- Pre Heat oven at 200 degrees
- Break open the potatoes, add 2 tsbp of Yeo’s Baked Beans in Tomato sauce, butter and grated cheese. Drizzle olive oil on top of potatoes.
- Bake in oven till cheese melts. Serve with a bed of salad greens.
